In nature, the maple is a master of transformation: in autumn its leaves glow yellow, orange or deep red before they fall. Canada has the maple leaf on its flag, and maple syrup is boiled down from the sap of the sugar maple. In Japan, viewing the autumn colours of the maples is as much a tradition as the cherry blossom in spring.
